Does it have to be exteranally mounted or can you mount it in the bilge area with epoxy. I have a ski boat and do not want to run wires on the outside.
No, it is a transom mount, it is not set up, or shaped to be a thru-hull mount.

will this gauge give temperatures at different depths? If not, do you make one that will?
Our temperature gauges will only detect the temperature of the surrounding elements, so unfortunately we will not have a multiple depth temperature sensor-- they are all using mounted sensors (either on the transom or on the bottom of the boat), and so can only read surface temperature.

Yes it will read off in both Celsius and Fahrenheit
