Can you leave it extended in the water while the boat is cruising?
No the connection to the support dooes not lock it in place, there is too much water resistence as well.

can you mount this to a lund v-bottom boat??
You can mount it to any boat that a transom mount trolling motor will fit, which is pretty much anything.

I mainly fish from a canoe and I wondered if this was the best for that type of fishing and a quick setup. Also does it break down into pieces or is it just the way you see it and no break down?

Can you use it for ice fishing?
Yes.Some I have heard people take a 5 gallon bucket flip it over and drill a hole through the bottom of it then slide the unit in. I think this would block your hole. I just took a piece of plexi glass and drilled a 4 inch hole through it. I lay the glass over part of the hole then slide the unit in. This leaves me with plenty of roonm for my line.This FB 110 is not as nearly as good as a vex but for the price it works.
