      I use with propane grilles and set the wood aside from where I am grilling. I allow the smoke to pour out of the grille as I cook and it adds great flavor to everything...beer can chicken, fresh turkey breast, steaks, pork tenderloin, pork chops, pork roast routissere etc.
      With the grilles I use there is no need for a smoke box, there is plenty of room to load the wood on a trough directly in the grille. So I cook over 2 burners and smoke the wood over the 3rd.

                  Chop wooden chuncks into smaller pieces and soak them in water, then add the chips to a white hot charcoal bed. The smoldering chips will add a great mesquite flavor. Using this method will provide the best characteristics of both charcoal and mesquite.
