I like that the product comes with the casings. The mix doesn't have a ton of flavor. Don't get me wrong it's not bad by any means, it wont wow you thought. Everyone who tried it thought it was good, but had the same response, somewhat bland. I added more spices to my second batch and thought it had more pop.

This was some of the best summer sausage I have tasted. The only changes I made were adding 1.4 oz of mustard seed, and one container of mcormic garlic and pepper blend to a 15 lb batch. Excellent!

Very easy to use and mixes evenly through meat. When cooked mild smooth flavor every bite, not heavy bite the next lightly seasoned. EXELLENT PRODUCT

I been using Hi Mountain for years. Its easy to use. I smoke mine, if you don't have a smoker throw it in the oven it come with directions. I add fresh garlic, mustard seeds, and jalopenos. I use 30% pork butt to 70% venison or lean beef. Everybody I make it for, they all want more next year. Can't find it cheaper.

I really cannot tell you my opinion of this product right now since I have not used it yet. My son has though and I love the summer sausage that he made using this product. So I am anxious to make my own. Thanks for selling this product.

I followed the mixing directions to the letter, I do not own a smoker so I cooked it in the oven and it came out very bland and without any flavor, very dissapointed in the end result.

I cook mine overnight at 200 degrees F or until they reach an internal temperature of 165 degrees F. I use a jerky pan with a rank to catch drippings and have cooked up to 8 logs on 1 pan (not sure of pan size) If I had more racks for oven could cook more at at time.Answered on 11/17/2010 by Beth the Butcher from Terre Haute, INA:

Yes you can add cheese to this kit. It is a special high temp cheese. I believe you can order it from lem, I get mine from my local meat market. It usually comes frozen and pre-cubed, and must be mix in just prior to stuffing. And although it is called hi temp cheese it can only put up with about 200 degree. We sucessfully added cheese to this last year. We tried a couple of ways, with the most sucess being adding the cheese right before we stuffed the casings.
