            I've been a Bradley smoker user for over five years. I use alder mainly for smoking Salmon which I only do in the winter, I like to cold smoke my Salmon, so for the first couple of hours I leave the heat off. I turn the heat on only for the last hour to firm up the Salmon. I smoke about 80 pounds of Salmon every winter. Alder is the true northwest way to go.
