Very easy to use works great. Recipe book was helpful made some tasty jerky doing a turkey next.

I bought this for the sole purpose of making venison jerky. I was surprised how easy this was to do. When making jerky u only really use smoke the first few hours and the rest of the time you are drying the meat. I was surprised how well it turned out my first time ever making it. Took it to hunt camp and it was gone after a few hours of playing cards. I have my second batch marinating as I write this. Mouth is watering mmmm

Bought Big Chief because for some reason it was cheaper than Little Chief. No problem, works fine with "small load." Wanted smoker primarily for fish, after reading reviews of numerous smokers, decided to try this one. Smoked two small (20 inch) lake trout (skinless filets) using slightly modified recipe from the included book, ready in about 4 hours, 90 degree day, no additional cooking needed, very happy with results. Only needed two of the five racks for the filets. Simple design, light-weight, easy to move, easy to load and use. Have only used it this one time, but it may turn out to be a 5 star for fish.

This smoker is very useful and easy to use. It will smoke any type of meat and fish. Every thing comes out smoked to perfection. I would recomend this product.

Turkeys less than 12 pounds are suitable for smoking whole. A larger turkey will not cook fast enough in a smoker to guarantee its safety. Larger turkeys can halved or divided into pieces for smoking.
Turkeys should not be stuffed when smoking. Because smoking uses a very low temperature, the stuffing will not cook fast enough and will spend too much time in the danger zone, below 140 degrees Fahrenheit.
Smoking Times
Smoke the turkey at a low temperature, between 225 and 250 degrees. Expect that the turkey will require at least 30 minutes per pound to smoke at 230 degrees. A 12-pound turkey will need six hours--minimum--to smoke.
